I succumbed at Costco yesterday and bought a 13 pound top loin to cut
into NY strip steaks. $6-something a pound, not bad. Choice grade.
let's hope it's good meat! I love their lamb but have not tried the
beef before.

Their meat was one big reason I rejoined Costco. I doubt

Heh. had to look up this cut on The Cook's Thesaurus". Gather its part
of the top loin? Still trying to decide if this is what we call
"sirloin"... The price is about the same we pay for fillet steak
(tenderloin).
How does one normally cook it? Grilled/fried or what?

Methinks it's going to be either dinasour steaks (rump steaks I cut

According to the label it is NY strip steaks. It's a tender steak so you
cook it like a ribeye, porterhouse, etc.

Knowing my style and phases of cooking, she replies with a main

I need to be more challenged!!!
My 2 sons used to give their dinner requests (much to the amazement of
their peers) as they walked out the gate to go to school....... one
would say "Vietnamese", the other would say "Burmese" (they used to look
at maps of the world regularly!!)........... but at the end of the day,
they had what they requested on their plate in front of them.
And I made them eat it too :-)

You must be planning a big grill out for this afternoon... gonna eat
all that steak right now I hope... if you freeze them they drop two
full USDA grades... then you paid $6/lb for stew beef. If you ordered
NY strip at a steak house type restaurant and they served previously
frozen beef normal brained folks would never patronize them again.
You just paid more than $80 for beef steak that if you froze it is now
worth about $40.

USDA grading is not based on fat content/distribution alone, there are
other just as important aspects, such as the color of the fat, the
texture of the fat, the color of the flesh, the texture of the flesh,
the condition of connective tissue, and a few more points that are not
readily apparent, such as the age of the animal, how the animal was
fed, etc. Are you not aware that freezing dramatically alters the
texture of food, especially meats, and again dramatically altered upon
thawing. And in fact it's illegal for previously frozen USDA graded
beef to be sold by retailers to the public, because frozen beef is not
fresh beef, adn USDA graded beef must be fresh beef. When you buy
frozen mail order beef that is Branded beef, Branded beef is not USDA
graded... can only be one or the other, can't be both. It's far wiser
to go to the market on the day you decide to have tender beef cuts and
buy it then. In the US there is tender beef on sale at the market
every day, choose the cut of the day and be happy. Fresh beef is
highly perishable, so no meat department is going to raise the price
above what people will pay or they will very shortly be selling $6/lb
beef steaks for $3/lb as ground beef. Buying an entire loin of beef
all at once only makes sense if you own a restaurant. Anyone who
spends good money on tender beef to stock up a freezer is a pinheaded
idiot.
