  1. Patches asked me a recipe.
    Here is my preferred dish. I hope you will enjoy it.

    SPAGHETTI with CLAMS (Pandora's recipe))

    Category: First dish
    Nb persons: 4

    1 Kg Clams - big variety
    1/2 cup oil - EVOO
    1 cup parsley - fresh and chopped
    2 cloves garlic - whole (not chopped) and without skin
    1 hot chili pepper - chopped (you can put only
    -half if you want)
    1 cups white wine - dry
    salt - for the water
    1tbs corn starch
    500 gr Spaghetti

    While the salted water for spaghetti is on the fire, prepare a large frying
    pan with oil, whole cloves of garlic and pieces of hot chili pepper.
    Cook for about 2-3 minutes and when the oil begins to become hot, put inside
    the clams and half of the parsley. Put also the wine; cover and wait that
    clams open (shaking sometimes the frying pan).
    When all the clams are open, let them cool. Shell with your hand only one
    half of the clams (keeps the other to garnish the dishes). Throw away the
    garlic.
    Put again the frying pan on low fire (just a little before spaghetti are
    ready); if , after the cooking, just a little liquid is left , add some of
    the water of spaghetti.
    At this point add to the clams 1 tsp of corn starch and mix with a wood
    spoon to make a creamy sauce.
    When spaghetti are ready and "al dente", drain and put them in the frying
    pan. Mix well and serve in dishes with some whole clams and other fresh
    parsley.

    For some reason the restaurants here USA tend not to use spaghetti for clams &
    sauce but rather they serve linguini.

    Don't know why but it seems to be quite traditional.

    this. It will give me a chance to try something new and use up some
    parsley from the garden.

    Also here in Italia, some restaurant serve linguine in place of spaghetti.
    I prefer spaghetti "De Cecco" because they are a little rough and the sauce
    doesn't slide away 🙂

    Sautéing the garlic whole in oil and then throwing it away is a very common
    technique. My Step-Grandmother (from Naples) used to damn near burn the garlic
    then toss it

    Excuse me there is no such thing as a *friendly* game of poker! There
    are no friends in cards something DH and his family have drumbed into my
    head ever since we wed. The food may be good but there still aren't any
    friends in poker 🙂

    yes! I also do like this. It remains the taste of garlic, but you don't feel
    those little pieces or slices in your teeth (it could be nasty if you have
    guests).

    She kept a 1/4 wheel of Parmigiano Reggiano in the kitchen so it was always
    fresh. I loved to watch her cook. even though they had several servants - the
    Italian food she always cooked.

    Did you go in Naples, how many years ago? What italian dishes have you
    learned from your Step-Grandmother?
    In Italy (more in the south) they use big pieces of Parmigiano or Pecorino
    that they grate at the moment.
    In America what do you use? You buy the grated one?

    I use both for a nice clam pasta. But then I use almost any type of pasta
    for just about anything. Like you it depends on the sauce I'm making.
    Basically I like all pasta.
