I don't, but I just buy it at the store. It's amazing how different
varieties of tomato-based sauces can have vastly different carb counts.
I read all the labels and look for ones with no HFC or added sugars, and
then from those I look for the lowest carb count. I can't remember what
brands I've bought, because I buy it so infrequently, but I can usually
find some around 5g per half-cup serving, and since I use just a few
tablespoons when I have something like chicken parmesan, I consider it
low-carb enough for me.

That's what I do too. First, you can forget about all the common
brands everyone knows about, ie Ragu, Preggo, etc. The ones that are a
little more expensive tend to have a lot less carbs. There are also
some very inexpensive ones, like Casa Visco, which makes spaghetti and
pizza sauce that I think is about 4g net per half cup. There are quite
a few that are in the 4-6g range. There are also the Carb Option ones
which are LC.
If you want to make your own, you could probably find recipes at
foodtv.com and adapt it. As long as you don't put sugar in it, it will
likely turn out to be about the same carb count as the commercial ones.

I always do it on the cheap.
1-2 cans of tomatoes (I prefer imported italian)
half an onion
sliced mushrooms
Saute mushrooms & sliced onion in a saucepan, add tomatoes, simmer 30 min.
Add dried italian herbs, and fresh herbs from the garden.
Maybe add a little sugar or artificial sweetener to balance flavors.

Spaghetti sauce can go on things other than spaghetti, just as butter
can go on things other than toast.

I rarely make things the same way twice, but this one turned out really
well:
ground turkey - 2.5 lb (20 oz)
cabbage - 11.3 oz
celery - 21.8 oz
garlic - 30 gm
mushrooms, crimini - 12 oz
onion - 2 medium
tomato sauce - 58 oz
diced tomatoes - 28 oz
zucchini - 13 oz
burgundy - 2 cup
marjoram - 1 tbl
basil - 1 tbl
oregano - 3 tbl
parsley - 1 tbl
thicken thin/not starch - 1 tbl
I use Safeway's brand tomato sauce and diced tomatoes because they don't
put sugar in it. I tend to stay away from ground beef, so I used ground
turkey instead.
The above made 24 cups of sauce at 7.4 net carbs and 114 calories per
cup.

I ended up doing it very similar to yours. I used fresh galrlic and onion,
and green peppers. Then just added tomato sauce. It turned out wonderful!

I use a lot of the classico tomato and basil sauce. It has a
relatively low carb count for a reasonable amount of sauce. I use it
either with these frozen meatballs we get from sams and slices of
provolone cheese, or I make a "pizza" with low carb tortillas, cheese,
and pepperoni.

It's also true that years of label reading has had an
impact on manufacturers so keep checking every couple
of years. Around 5 years ago several brands of tomato
paste used to have corn syrup in their ingredient list
and they no longer do. Clearly the result of low
carbers or whoever reading labels and declining to buy
ones with added sugar. Last time I looked Newman's Own
appeared to have a low carb count.

So what to put that sauce on, folks? Pasta tends to
be high carb and I tend to disbelieve claims about
"digestible" carbs and such. Spaghetti squash - been
there, done that. What else?
I've made veggie casserole with a tomato sauce in it.
Good but doesn't seem to be a substitute. I've made
chicken carriatore with tomato sauces.

carbs. You are only allowed to eat the sauce. Otherwise you will be
reported to the Atkins Corp and you will be fined and prosecuted.

I just use fresh peeled tomatoes and a variety of my choice of fresh and
dried herbs and spices.
If you need something specific, let me know and I'll jot something down.
I generally just make up stuff as I go following a general outline.
