Smoked Salmon Surfeit

  1. So, I went to Central Market (fancy shmancy food store) yesterday and
    asked for a quarter pound of smoked Norwegian salmon. For some reason,
    the guy behind the counter gave me a pound of the stuff -- and only
    charged me for a third of a pound. An embarrasment of riches!
    (Particularly since the stuff runs 22 bucks a pound.)

    So now I've got three-quarters of a pound of delicious salmon in the
    fridge, and I'm the only one in the house who will eat the stuff. I
    love lox and bagels, but after three meals of it, I'm looking for a
    little variety.

    I might do a scrambled egg/smoked salmon/cream cheese thing tomorrow,
    but other than that, anyone got any ideas? (Other than freezing it.)

    Other than that: a pasta dish with a creamy sauce or some melted
    ricotta, plus the salmon, steamed snow peas or sugar snap peas, red
    peppers, and dill

    A quiche with the salmon, lightly steamed asparagus, and goat cheese

    Last year I used some leftover smoked salmon from Chrtistmas morning in
    my devliled eggs filling - i used half mayo, half sour cream, diced
    smoked salmon, and dill. These went fast!

    Smoked salmon pinwheels- spread with cream cheese, these go nicely as a
    snack or lunchbox item for my spoiled foodie 9 year old!

    A wonderful hawaain salad recipe someone gave me here - dice the lox
    along with a nice tomato and a cucumber, plus some cilantro if you like
    it. Drizzle with toasted sesame oil; toos and chill for an hour;
    sprikle with sesame seeds. (I think that's everything from memory,
    although I didn't go find the recipe.)

    Yeah, I had a bunch of beet and horseradish cured salmon
    left over from xmas myself. It ended up in roll ups for
    one of the party week luncheons.

    Take a tortilla, lay in some cream cheese, something
    green like arugala or cilantro, mustard, capers, chopped
    onion or shallot, and your thinly sliced salmon. Roll up
    and cut on a bias.

    I'ts really easy to freeze Karen.

    In fact I buy mine frozen. I just interleave it with
    plastic wrap and put it on a flat bit of cardboard covered
    in plastic wrap and vacuum seal it. Keeps a looong time
    that way.

  5. My #1 favorite with smoked salmon is a smoked salmon souffle. It's
    extraordinarily easy, especially when you make the bechemel sauce in the
    microwave. Use at most 2 egg yolks, and at least 7 egg whites.

    Hi,
    was it warm or cold smoked? The former is sort of "cooked" in appearance
    while the latter somewhat resembles gravad, but with a clear smoke
    flavour and scent. Sorry, I don't know how to describe them better.
    Anyway, if it was cold smoked (which I like better), one very simple
    way to enjoy it is with a good fresh and warm rye bread (with whole
    grain in it, if you can get the sort) and butter. Also, as someone
    already suggested, with a good fresh pasta. But instead of using cream,
    just try it with some oil (something neutral in taste, IMO olive oil
    doesn't go well with salmon) and the smoked salmon cut to smallish
    pieces, with a bit of lemon pepper and finely chopped sauteed onion.
    Simple tastes, but so good.

    Perfect -- and easy. I have to make appetizers for tonight's Rose Bowl
    Game (thank God I have my mystery critique group and can be elsewhere).
    What doesn't get used today goes into the freezer; I'm printing this
    thread and will sample the recipes over the next month or so. Thanks
