You've got it. The shift levers are the same whether double or triple, and the rear derailleur might
weigh a few more grams for the long-cage version, and it won't shift as well if you stick a corn-cob
cassette on it (11-21 or 12-23, that sort of thing) but for a 12-25 or 12-27, it will do fine.

The biggest issue will be getting the front derailleur to shift correctly. Use the innermost
position (the granny gear) for the inner ring. That way you should never have to worry about
dropping the chain off the inside. You can use the high limit screw to prevent an overshift
onto the big ring. As far as the rear derailleur goes, you can use it, but you may have some
sloppy shifting, not due to using a long cage, but from the extra chain length necessary,
and the resulting lower chain tension. You also may have problems with the BB. If you go
from a triple to a double, the chainline will change, and you'll have the same crossover
problems as with a triple, so you may want to go to a double width BB (109.5mm).

No for either and probably not the front der either altho a double will work better, the triple will
shift the 39 to the 53 and back.

I have a complete 105 double, low mileage, I'd be happy to trade. I've been considering ways to go
triple cheaply...
