Depends who you talk to. Most regard them as pretty good. But you do get
some Campag fanatics who insist they are [censored].

Personally, I have only ever used 105, Ultegra, and the odd Dura-ace part

I've always used Campag so I don't know fro mpersonal experience. I know
people who've used 105, Ultegra and DA and they all say 105 is
noticeably inferior.

I don't understand why Shimano bother making 105 - I guess it's to keep
the price down on 105 OEM bikes.

An Ultegra groupset is only $150 or so more than 105, so from a value
point of view I reckon Ultegra would have to be the go.

Although, in practice, I reckon 105 would be just fine.

105 is fine. I have Ultegra cassette's because I found the 105 teeth wore out and were a little bit rougher in changing. However, it could be purely psychological. It's the engine, not the groupset, that's the limiting factor in my case. However, to be honest, when I buy my next bike it will be carbon and have at least an Ultegra groupo. If I don't go any faster after that then I think I'll get the engine reconditioned!

The STI lever internals are the same as Ultegra, and wear out after about 2 years of regular riding. Dura-Ace are a different feeling lever, and a little longer lasting. For example, the rear derailleur has a steel backplate, non-sealed jockey wheels, its pivot bolt is not drilled out, but the has most of the same parallelogram forgings as Ultegra. They just drop the specs a little. The hubs are as good as Ultegra, the brakes are a little cheesier looking (but work OK), but the 10 spd Ultegra groupset has copied them. WHYY???
