I finally made a decent meatloaf for supper. We've been entertaining
the sprout for two days and I figured Rob deserved a treat. Nothing
fancy and I'm not sure I can replicate it, but I started with a pound
(or a # for Rhonda) of 80/20 ground chuck. Broke up and smashed about 8
soda crackers in a bowl with an egg and maybe a half cup of milk.
Worked the meat into it, along with S&P and maybe a tablespoon of
Penzeys toasted onion bits. A little dehydrated green & red bells, and
a gob of ketchup went in, too. Patted it into a loaf shape in a pie
plate and baked it for about an hour at 350, along with one potato for
the two of us to share. Green peas and a tossed salad rounded out the
meal. The two of us ate the whole thing -- it was just the right
texture.

Where'd you get 'em? My mom makes a wonderful pork salad and dehydrated
peppers are essential in preparing the pork. It's been a couple of years
since she could find any so she's had to change her recipe.--
