    Nice. Just remember to take off the little muscle on the side of the
    scallop and be very careful not to overcook or you'll have nasty rubbery
    things!

    Besides my rather unoriginal idea of putting them on salads or as a "side
    dish" with fish, what else can I do with them? In a cream sauce over pasta
    was the "old way" to have them...and I suppose I could coat them and deep
    fry them still...but was just wondering if anybody had any other ideas for
    them? Actually he could eat them as a main course but I'd rather not use
    them all up for just a couple of meals, considering the price.

    Oh yeah, I didn't mention that we do that too...I used to do that and serve
    them over buttered pasta also. And they're really good that way, or as as a
    side...thanks Sandy 🙂. I guess I'm kind of looking for a way to make them
    a major player in a main dish that doesn't involve pasta. I think spaghetti
    squash has too strong a flavor and would overwhelm them...cabbage etc maybe?
    as in a stir fry? Just thinking through my fingers here... 🙂

  7. They're great grilled-- butter em up and throw em on the grill. If you
    have a George Forman kinda grill, that's fine, too.
    A squeeze of lemon or lime, salt and pepper to taste.

    Or, saute some with mushrooms, garlic and a wine/butter/shallots
    reduction.

    Or bake them in custard cups with cream, butter, a goodly sprinkle of
    fresh grated parmesan, some thyme or any other herb you like. Garnish
    with a little lemon or lime zest.

    For this last one, if the scallops are big, you might cut them into
    smaller pieces. f they're small, use as is.
    about 15 minutes at 350.

  8. My favorite low carb "pasta" meal is shrimp, scallops and frozen artichoke
    hearts in Alfredo Sauce (I use canned) over spaghetti squash. Non LC SO
    loves it, too. (My cat Hunjo gets one scallop, too, he is crazy about
    them.)

    I've never grilled them but will try that too! and the last one...oh yeah,
    baby, now you're talkin! 🙂

    I like to marinate them and then grill them with the Foreman grill for
    about 2.5-3 minutes.

    I also have had them with shiritaki noodles, cheese and alfredo sauce,
    but I like them grilled better.

    I assume you mean Bay scallops (little) as opposed to sea scallops (big

    Bay scallops should be considerably cheaper than sea scallops.

    Use them as accents or fillings.

    1) Stuffed rib eye - cut a pouch in the side of the steak so it looks
    like 1/2 a pita. Saute scallops with a few mushrooms in butter while the
    steak is grilling. When the steak is done, fill it with the
    scallop-mushroom mixture. A splash of pan juices over top won't hurt.

    2) Stir fry - cauliflower, broccoli, onion, ginger, scallops. Finish
    with a tablespoon hoisin sauce or some other sauce you like.

    3) Soup - chicken stock with mushrooms, black soy beans, scallions and
    scallops.

    4) Paupiettes - two-ounce, thin fish filet wrapped around a few scallops
    and toothpicked together. Poach in simmering court bouillon (1/2 water
    and 1/2 beer with some Old Bay seasoning) for about 10 minutes. Serve
    with Hollandaise sauce.

    5) Stuffed zucchini - split zucchini lengthwise and scoop some of the
    seeds out. Bake at 325°F until tender. Meanwhile saute some chopped
    dried tomatoes and celery until tender, add scallops for a minute or two
    and fill the zucchini boats. Sprinkle with sesame seeds.

    6) Scallop mousse - puree scallops with finely minced onion and a bit of
    seasoning salt, and fold in egg whites whipped to the firm peak stage.
    Poach on court bouillon and serve on a plate coated with Bearnaise sauce.

    Amen. They should cook for seconds rather than minutes. They're done
    when the flesh reaches about 140°F.

  14. I made some of the scallops today out of the big bag of them. These were
    little ones, about the size of a marble, and I just put them in a pan with
    some bacon and stirred them while they cooked over high heat, they were done
    in about 4 minutes and since the bacon was already-cooked leftovers from the
    other day, it was quick and easy. We had them as a side dish with spaghetti
    squash and buttered mushrooms and I do have to say that they were so good,
    the temptation to go do the same with the rest of the bag and pig out is
    great - lol. However...I'm actually full from dinner and won't - but I will
    definitely look forward to having them again.

    (BTW, having the mushrooms by themselves rather than mixed with the sauce or
    the scallops is one of those tricks, makes the plate fuller that way.)

    Thanks for all the suggestions, I'm going to try something different each
    time I think.
