  1. Anyone know of a good website that will inform/educate me
    on Sausage?

    There is a Bristol Farms store near my neighborhood that has
    many varieties and I would like to shop prepared.

    Thanks in advance for any help that you might offer.

    What does that mean?

    I did a google.com search on 'sausage varieties' and found
    what I think you're looking for. It's got a nice glossary of
    sausages. Info about seasoning, whether smoked or fresh --
    that kind of thing.

    If you were better educated, you'd realise that a recipe for
    a particular type of sausage tells you what is in it. The
    technique comes free.

    Go to the SausageMakers website...I assume you can use
    the internet well enough for that. Then spend $25 for his
    book. It is worth it. However it is not on tape for those
