  1. Here's my salsa pics. The salsa is a medium heat one. I ended up with
    12 - 500 ml jars.

    A few asked what a hamper of tomatoes was. Here's the pic. I'll
    process 8 - 10 of these this fall. This is hamper number 6 to be
    processed today. Hamper 5 was processed into the first batch of salsa.
    The tomatoes are dirtier because we've had rain.

    The workhorses - lg stock pot, pressure canner, stove. The pressure
    canner doubles as bwb when I leave the seal off. The lid to the
    pressure canner isn't shown but is used for both pressure canning and
    bwb canning.

    Your canned salsa looks like Trader Joe's $1.99 for a pint, I believe. It
    is very good - we ate 2 jars in two days with chips. Your pictures are
    fabulous.

    Very nice. What variety of tomatoes are those? If your tomatoes are
    too juicy, do you ever add a tiny bit of tomato paste to a batch of
    salsa to compensate?

    I sometimes add an 8 ounce can of tomato to the batch (10 pints or 7
    quarts) when I can whole peeled tomatoes to make the juice redder and
    thicker.

    It was raining mud!!!!

    Nope not raining mud but the rain created the mud that gets on the
    tomatoes. I get the tomatoes from relative who farm so unlike the
    tomatoes I grow the hampers have mud in them and the tomatoes are pretty
    dirty if we've had rain.

    Thanks Dee. We don't have a Trader Joe's here and I've never been to
    one so have no idea what their salsa tastes like. IME most cooked
    tomato salsas look the same but the truth is in the flavour. I make a
    very mild - to me anyway - salsa as well as a medium and then what I
    would refer to as firey. They basically all *look* the same but the
    flavour is quite different.

    Thanks! The tomatoes are roma T900's. These are tomatoes that go to
    Heinz and I get all I want free 🙂 I don't add tomato paste to the
    salsa but I will say these tomatoes make very nice tomato paste. I did
    a batch of tomato paste then froze it in muffin tins. I'll do another
    batch and can because I go through a lot of tomato paste. I don't peel
    tomatoes for sauce or most juices. I run them through a food mill that
    really makes my work a lot easier 🙂 I grow tomatoes as well -
    brandywines, beefsteak, romas, yellow mellows, and tiny tims - .
    Brandywines and tiny tims are great for salads. Beefsteaks are for
    sandwiches. Yellow mellows and romas go into sauces and salsas. Tiny
    tims that manage to get into the basket before hitting my mouth end up
    being used for salads and snacking.

    My salsa always looks this way. It looks a fresh as the day I cooked
    it. My jars are clear too so there is no changing of colour. I home
    can everything from soups, stews, meats, beans, fruits, veggies, and
    sauces mainly to stay away from preservatives and extra sugar or salt.
    Maybe the brownish ones have preseratives in them?

    Or, perhaps they are cooked/pasteurized a little too much. The artist in me
    says: red and green, in the correct proportions, make BROWN. [red tomatoes
    and green cilantro/parsley or whatever].
