I made a fresh salsa a couple of weeks ago ... and it might have been 3 weeks! Tomato, onion, garlic, like that. It's been sitting in the refrigerator since then. I'm having it for breakfast with some tortilla chips and you wouldn't know it was more than a day old.
Weird. I did put lemon in it (sorry, didn't have a lime), but how long will lemon preserve?? If you don't hear from me, old salsa disease got me.

Salsa never lasts that long around here when I make it. Did you use canned or fresh tomatoes? I'm thinking if you used canned the preservatives along with the acid in the tomatoes and lemon might have helped preserve it a bit. I'm not sure and that is just a guess. I'll have to do a salsa experiment to see how long fresh salsa lasts 😉

Heh. Funny. I used those Caprese tomatoes, and, yes, it was a little amusing dicing up those little things. Maybe that's it. A large tomato skin ratio keeping the flesh from dissolving. I just threw it together at the last minute to serve with carnitas I'd bought from Costco. That was a while ago.

I would think salsa lasts longer than a lot of other dips and sauces due to the tomato (acid) content? That's just my guess.
I often make my own salsa, but I occassionally go to a couple of local Mexican restaurants to buy some of their "house" salsa (16 or 32 oz.). The small 16 oz. portion is only about $2 and oh-so-much better than any bottled stuff at a regular grocery store. However, it's not quite as good as my very own salsa when I make it <VBG>.
