Roast duck with mango salsa...

    commercial. The second doesn't have much of an
    appetite, apparantly because he is majorly ticked
    off, I guess.

    Well, I was wondering if roast duck with mango
    salsa is a real dish. I suppose anyone could roast
    a duck and make up a batch of mango salsa and pour
    it over the duck. What I am interested in is
    whether it is an "established" recipe like Peking
    duck or duck a l'orange.

    I think it's just meant as a demonstration that Cave Man is no different
    in sensibilities than contemporary man: overweening and pretentious.

    The grey area in your question revolves around the term
    "established". What exactly should this mean?

    Is the dish in Escoffier? No, but I have seen it served
    here in the SF Bay area. That's not proof that it can
    be described as "established", however.

    At what point could one describe a dish as established?
    When food writers acknowledge it (or just certain ones)?
    When they begin teaching the recipe at Le Cordon Blue?

    Personally, I don't know the answer. I'd be interested
    in hearing opinions.

    LOL! Suffice to say, if you've heard of it, it's been "established". I
    don't think it has to go down in the annals of history to be considered
    such. The Sugar Reef restaurant in Hollywood, FL has it on the menu for
    $22.50.
