Do a few missed workouts a month have a big effect on TSS? I would assume they would and my crazy method might be better than no data?!?!?

Just make a manual entry for that day with an estimate of power and duration (double click a blank day on the calendar), or manually set a TSS over ride (right click on a day in the calendar with an entry).
I find that since most of my training is likely to be similar to something I've done before, I can predict my TSS pretty closely. Rare I need to do it now as I record everything and have a backup PT wheel but sometimes it can happen.
Perhaps you need to do some rides like the ones you plan to do in the winter to set some benchmarks.
As a rule of thumb, estimating TSS this way (assuming reasonable estimates) for <10% of rides is probably OK and won't throw your Performance Manager Chart out too much. Beyond that and you could be introducing errors that may suggest caution when interpreting the PMC.
