Can anyone recommend the bes rice for paella? One recipe I saw called for
"risotto" rice, but I can't find that in any of the supermarkets. Any help
will be appreciated.

Can anyone recommend the bes rice for paella? One recipe I saw called for

You might try going to an Oriental market and asking for "sweet rice".
When I buy it, it is usually fat little oval grains with an odd
opaqueness (that's probably the dextrose coating.) The last batch I
bought came in a plastic zip-lock bag where the proprietor had divided a
big sack, and it looked more like long-grain rice with a white coating,
but it cooked the same as the usual very short grain.
(It's not enough dextrose added to really make it taste sweet)

The best is Bomba, an excellent but hard to find Spanish rice. Risotto rices
work well too - the most common kinds are arborio and carnaroli.
