A gift of rhubarb is more than I can use and don't have time
to do anything at the moment - has anyone knowledge or
experience with blanching and freezing? TIA, Judith

heating in boiling water for 1 minute. Pack in freezer
containers without sugar. Seal and freeze.

I agree with the second posting. I've been freezing rhubarb
for years and I've never blanched it.SS "Kate Connally" <[email hidden]> wrote in message

away. JudithSpeaking of rhubarb there is a large bunch waiting for me in
the office fridge. A friend who has a farm brings me some
every year. She doesn't care for it and there is a ton of it
on the farm. I will take it home and save it for the weekend
when I will make the rhubarb custard cake and freeze any
that's left over. Maybe I'll try the rhubarb ice cream
someone else suggested. Sounds like it would be good.Kate
