How do you remove a star nut from inside a fork tube without
damaging the fork tube?
Driving it out the bottom seems like it'd tear up the
aluminum fork tube.

Why would you want to remove it? They are real cheap so that can not be it.
They do not weigh a lot so.It think driving it out the bottom is the only way without cutting if

Just hammer it down inside the tube, you can probably fit a good 5 or 10
of them in there. Tell people it's for lateral rigidity.

vanilla for instance, and it will get progressively more difficult
till its wedged right in the bottom.
As said above , drill out the central core and bend it in towards the
middle to remove.g
