    Watergate Salad

    Recipe By 😄amsel
    Serving Size : 8 Preparation Time :0:15

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 package instant pistachio pudding mix -- 4 serving size
    20 ounces crushed pineapple in juice
    1/3 cup maraschino cherries -- quartered
    1 cup miniature marshmallows
    1/3 cup chopped pecans
    1 3/4 cups Cool Whip -- thawed

    Stir pudding mix, pineapple with juice, marshmallows and nuts in large
    bowl until well blended. Gently stir in whipped topping.

    Refrigerate 1 hour or until ready to serve.

    Per Serving (excluding unknown items): 101 Calories; 3g Fat (28.6%
    calories from fat); 1g Protein; 18g Carbohydrate; 1g Dietary Fiber;

    1/2 Fruit; 1/2 Fat; 1/2 Other Carbohydrates.

    I've had this before and reeeeeally enjoyed. I know people wouldn't
    touch it because it contains *ahem* instant pudding and Cool Whip, but
    I liked it!

    Every so often you come across a recipe like this using boxed or prepared
    products that really end up tasty. I've also eaten it and liked it, and
    would probably make it if I would remember. :-)

    Every Thanksgiving my contribution to the meal at my sister-in-law's
    house is a baked ham and perhaps some other dish. I think I shall make
    this salad this year to add to the fare. Last year I took it upon
    myself to make a gooey pumpkin cake using Paula Deen's recipe. It was
    just ok, nothing I wanted to make again. To be fair, it was much
    better the second day with a cup of coffee for breakfast.

    Reminds me of my mil, she made that once in a while. Only thing
    I have to say is that I once bought canned crushed pineapple instead
    of rings by accident ... it was like all the parts of the pineapple you
    wouldn't normally eat and it was not good at all. If it was meat it
    would be all gristle. I'd take pineapple chunks and cut them up
    myself, instead.

    My gingerbread is the same way. It's much better if it's sat for a day or
    two before serving. I have to plan ahead when I want it.

    I do buy crushed pineapple, but I always buy it at the Asian market. It's
    entirely different and much better.

    Dunno. I've never tried it that way. The only problem I'd forsee
    would be that it wouldn't last into the leftover stage because the
    whipped cream would die. We've only had some leftover once, though, so
    it's not a big issue. BTW, the cherries are my addition. Feel free to
    leave them out. I also think this might be better with sliced or
    slivered almonds than with pecans. Crash would boycott Thanksgiving if
    I didn't make this stuff.

    Sorta yes, sorta no. I think I'm gonna be posting a lot less than
    usual. I've been so tired and depressed lately, it's a struggle to
    keep on top of anything (shaddap, Sheldon). <G>

    This outburst of recipes is basically our Thanksgiving menu. We'll
    have normal-type mashed potatoes and gravy and some dinner rolls from
    frozen wads of dough. And our guests have requested the dreaded green
    bean casserole and Crash concurs. It'll be made with cream of chicken
    soup, so I'll probably have a glob on my plate, too.
