REC: Bang Bang Chicken

  1. This is what I am making for dinner tonight. The recipe came
    from www.chinesefooddiy.com I was actually looking for a
    decent War Su Gai recipe and came across this one along with
    the one I was searching for. I'm going to omit the MSG. I'm
    going to steam some rice and make egg drop soup to
    accompany. I'll probably throw some veggies in the wok,
    green bell peppers, bamboo shoots, spring onions, red and
    yellow bell pepper cooked in sesame oil.

    Bang Bang Chicken

    Ingredients:

    9 oz (250g) chicken breasts and thighs 1 tbsp mushroom
    soy sauce (or substitute superior soy sauce) 1 tsp.
    scallions, shredded
    1/8 tsp. ground Sichuan Peppercorn 1 tsp. sesame paste
    2/2 tsp. sesame oil 2 tsp. chili (chilli) oil
    3/2 tsp. sesame oil 1tsp sugar
    4/4 tsp. MSG (optional)

    Directions:

    Poach the chicken in boiling water to cover for 10 minutes,
    or until cooked. Remove, drain, and let cool. Beat the skin
    side lightly to loosen the fibers with a bang (in Chinese, a
    wooden stick) or a wooden rolling pin. Peel off the skin and
    tear the meat into long strips with your fingers. You may
    cut the skin into strips also. Arrange the chicken strips in
    a dish a sprinkle with the scallions shreds.

    Mix together the sesame paste, chili oil, sugar, soy sauce,
    MSG (optional), ground peppercorns and sesame oil. Pour over
    the scallions and chickens and chicken and mix until coated
    and serve. the scallion oil over all, and serve.

    Huh? What kinda chicken is 9 ounces... the hummers I feed
    have bigger [censored] than your training bra chickens. I
    grilled my first perdue oven stuffer for the season for
    dinner tonight, it weighed 6 1/2 pounds... my cats ate
    more than 9 ounces.

    I don't get too creative with the seasonings or my
    babies won't eat it... salt, pepper, a bit of penzeys
    adobo.... quartered and grilled. On a 6 1/2 pound
    chicken those breasts weigh about a pound each... my
    chicks hafta have Double
    Ds.

    They are an ingredient in a salt rub that is sold

    You got me on the 9oz chicken. I used 2 big chicken breasts,
    skinned and boned. Probably right under 2lbs worth. The only
    chicken my cat will eat is Porter's fried chicken. I have no
    idea why. She doesn't like seasonings either. She almost
    never even sniffs at human food, but lately, she's been test
    tasting some things. I caught her eating some mozzarella the
    other day.

    Google for "citrus canker" and "peppercorns."

    Exactly right Bob. There really isn't a substitute so one
    has to adjust flavor with different peppers or ground
    pepper. At least I can't find them at the Asian markets here
    in St. Louis.
