I ordinarily make this dish from scratch but the raspberries and not all
that great yet. I use Jose' Madrid Raspberry Salsa. Any raspberry salsa
will do if you like it. I forgot to mention that with the mashed potato
recipe. This recipe is so easy to do. This is the basic recipe and the
chicken is baked. I usually grill the chicken. I tinker around with just
about every recipe and I seldom just eyeball instead of measure. I know, I
know... that's probably why my baking sucks.

    Raspberry Chicken:

1 12oz jar of raspberry salsa
4 skinless, boneless chicken breasts*see note
    2 cups of cooked rice

Pre-heat over to 350. Place chicken in a baking dish and add about an inch
of water. Poke holes in the chicken to tenderize. Bake for 45 minutes.

    When

the chicken is ready, top the cooked rice with the salsa.

    *Notes

Other variations include grilling. If the breasts are thick, I will put
them between 2 sheets of wax paper and use a mallet to pound them down.

don't have to poke the holes in the chicken if you have flattened them out
with a mallet. Instead of pouring the salsa on the rice, you can pour the
salsa over the chicken while it is baking for a yummy glaze. The salsa can
also be used as a marinade before grilling. Sometimes I will put the rice
on the plate, the chicken on the rice and pour salsa over all of it. If I
do it this way I sprinkle cheese (jack, cheddar etc. whatever I'm in the
mood for) You can do whatever else you want for sides. Enjoy!

Since I'm not a jammin' person I don't know how to make it. I Googled for a
recipe. This is the closet I came to any type of decent way to make it from
scratch. Try asking the folks in rec.food.preserving.

Thanks! The page is bookmarked... I've never put a berry name and
marmalade together in the same phrase before this thread. Is it
common? How have I mananged to miss it all these years?

This marmalade thread has made me think about making my Pinapple
Orange Marmalade with Grand Marnier recipe. I have to go on a long
hunt for the hard copy, it was filed in my now dead computer...
<sigh> I have to get better about backing up my files on CD from now
on. Some things (like recipe folders) shouldn't have to be rebuilt.

Practice safe eating. Always use condiments.

Berries like red currants and gooseberries are extremely [censored] and high in
pectin. They'll react much like citrus in a marmalade recipe.

    Raspberry Marmalade? <gasp>
Here's a link to some raspberry salsa recipes -- I haven't looked at any
    of them. <http://www.thefunplace.com/fence/
    recipeboard/messages/4708.html> Google on <recipe "raspberry salsa"> -
there are a bunch of links.

Not marmalade, but here's a "salsa" recipe:
    http://appetizer.allrecipes.com/az/RspbrrySls.asp
    Raspberry Salsa
    2 cups fresh raspberries
    1/4 cup chopped sweet onion
3 teaspoons finely chopped jalapeno chile peppers
    1 clove minced garlic
    1/4 cup chopped fresh cilantro
    1/2 teaspoon white sugar
    3 tablespoons fresh lime juice
    ------------------------------------------------------------------------
    DIRECTIONS:
    1. In a medium bowl, mix together raspberries, sweet onion, jalapeno
chile peppers, garlic, cilantro, white sugar and lime juice. Cover and
chill in the refrigerator at least 1 hour before serving.
