Not me. What I said the other night was, "Oh gosh -- I was going with
the traffic flow." What he really wanted to know was if I was belted in
(I was, as is my habit) -- he SAID so -- but he could only stop me for
a moving violation. Gave me a warning for the speeding and I thanked
him for his consideration. If I'd had a jar of jam in the car, I'd have
given it to him. :-)

Chokecherry Jelly/Certo

Amount Measure Ingredient -- Preparation Method

3 cups chokecherry juice
6 1/2 cups sugar
1 bottle liquid fruit pectin (Certo) -- (2 foil pouches)
1/4 tsp. almond extract (optional)
Pour juice into large kettle. Add sugar and stir to mix. Place over
high heat and bring to a boil, stirring constantly. Stir in pectin,
bring to a full rolling boil and boil hard 1 minute, stirring
constantly. Remove from heat and stir and skim for 5 minutes. Add
extract. Seal in hot jars. Makes about 9 half pints. Note: Almond
extract gives a stronger cherry taste.
Note: 9/15/92: Made half a batch using about 1 cup potent chokecherry
juice and 3/4 cup commercial cherry blend juice (Dole) with 3-1/4 cups
sugar and one pouch Certo. Clear and beautiful! Worked fine! Able to
cook it up in 3-quart Farberware saucepan. Made 4 half pint jars.
