Beer, beans, salsa, hottt chicken wings -- not a bad combination for
starters. Hey, might as well throw in some jalapeno poppers as well -- we
play fast, hard, lean, and mean, and don't usually cater to those with a
'delicate stomachs' anyway. ;-) I can always bring out a stash of rice
krispy treats to keep them happy.
Still looking for ways to use up the blue cheese and I found this. Looks
easy and I might give it a go:
Blue Cheese Terrine

This simple four ingredient appetizer spread is rich and delicious; perfect
for a company dinner.
INGREDIENTS:
3/4 cup chopped toasted walnuts
3 Tbsp. finely chopped peeled apple (Granny Smith)
1/2 lb. soft blue cheese, crumbled
1/4 cup sour cream
PREPARATION:
Combine all ingredients in a medium bowl and mix well. Pack into a plastic
wrap lined small bowl or mold. Chill for at least eight hours, until very
firm. Serve with baguette slices, water crackers, or focaccia. Serves 8-10
