    I'm in kind of a soup mood. And now the weather has decided to
    cooperate.

    I've actually been on a salad kick lately, but have plants for split pea
    soup the first real cold snap.

    Well , my soup switch has been turned on , and do not know why, hot
    and going to be for awhile, as you know.

    Made a really tasty but easy, potato , fresh corn, and bacon soup. Was
    a hit. Also tried a green gazpacho, it was not as good, had cukes,
    cilantro, onions, avocado in it. Sounded like it would be better than
    it was.

    Bought a butternut squash, and will make soup with that.

    My inner Fall cook is surfacing... even tho the weather is not
    cooperating.

    OH forgot, made a soup with eggplant--- total failure.

    Hm. Well, I'm not a cilantro fan.
    Made French Onion soup yet? That one is a personal favorite.

    I tried it once and failed. Probably did not do it right.
    Nobody would eat it and I finally ended up serving it to the dogs.

    Oops! Mom used to make a very good eggplant soup, and I'm no fan of
    eggplant. IIRC, she used a beef stock base instead of chicken. Eggplant
    is so strongly flavored, it needed a stronger base.

    Hmmmm maybe that was the problem,l will try the beef stock next time,
    I also love french Onion Soup, have not made that for awhile, and
    Tortilla soup... Oh ... now I need to make some of that. Love
    Soups. !!!

    I've made a potato-chanterelle soup yesterday. Not a drop left.
    So it's "Fachierte Laiberl mit Erdapfel-Salat" today. oh well.

    <lol> Imho, beef stock is also a "must" for french onion soup. :-) I can
    get a wonderful stock from pressure cooking Barbacoa with the usual
    aromatics and the meat gets used to make tacos or chili. I get double
    duty when I do that stuff. :-)

    PC for one hour is sufficient to make that meat shredable and melt all
    the collagen.

    Update : SWMBO brought chanterelles again.
    So I've just finished cooking "Eierschwammerl in Rahmsauce" (chanterelles
    in cream sauce) with "Serviettenknoedeln" (dunno how to translate that).

    The Laiberln are prepared and in the fridge.

    I've never had it, but there's a section on it in Slow and Difficult
    Soups that made me want to try it. Mmmm, soup!
