Grated, to taste.... guess it would depend how much carrot... thinking about 2 Tbs/lb. Needs butter too, two big knobs... presented drizzled with honey.

I usually grate it, but there are times that my grater has seemed to find other places to be so I have sliced it very thin w/ a potato peeler. Both work. My kids LOVE ginger (could it be that I was eating fresh ginger root like an apple while pregnant?? lol I don't know) I use quite a bit. I would say at least 2 tablespoons of grated or 10 very thin slices. There are times that I have blown off the salt, but it really does make a difference and takes very little. I have added white pepper too, I really like it that way but my kids didn't.
