The texture is different because commercial hamburger is typically a
mixture of cheap (lean, tough) beef from unfattened, grassfed cattle,
mixed with the excess fat from grain-fattened cattle. The use of
cheap beef and waste fat for the fast food industry keeps the price
of steaks and other cuts of beef down.
