    Preheat oven to 350 and bake for 40 mins. After 10 mins sprinkle
    cinnamon across tops of custard.

    Now it made this lovely light " crust " with the cinnamon and its just
    wonderful. But here is the issue. The stuff seperated and the bottom
    is very eggy and typically what i would call flan and the top with the
    " crust " is very , well creamy. Is it supposed to be this way? If not
    where did i screw up?

    You didn't screw up. The sugar in the traditional recipe does more
    than just add sweetness. You're seeing what else it does.
