mark v. said:I tried a flan reciepe and made a few mods to it. My reciepe is below.
5 eggs
1 cup of heavy cream
1 1/2 tsp of vanilla
1/3 cup of splenda ( no sugar version )
- add cinnamon to suit taste -Blend, then put in four custard cups. Place cups in water bath.
Preheat oven to 350 and bake for 40 mins. After 10 mins sprinkle
cinnamon across tops of custard. Now it made this lovely light " crust " with the cinnamon and its just
wonderful. But here is the issue. The stuff seperated and the bottom
is very eggy and typically what i would call flan and the top with the
" crust " is very , well creamy. Is it supposed to be this way? If not
where did i screw up?
You didn't screw up. The sugar in the traditional recipe does more
than just add sweetness. You're seeing what else it does.
