Dog3 said:I just put a pound of white beans (soaked overnight) and hocks into
the crock pot. Already smells good. I did a saute' of onions and
small dice of carrot and added it to the pot. I've done this in a
traditional stock pot too but for this, the crock pot is better. I
think some jalapeno corn bread will do nicely. My crock pot is huge
so tell me what else to add. I did not add much Kosher salt because
the hocks have plenty. I threw in a couple of Bay leaves and cracked
pepper. The weather is crappy and I wanted comfort food. Besides,
I'm freezing cold.Michael
You gots it with the bay leaves and cracked pepper. Now what you need to do
is bake some cornbread to go with the beans.
1 c. yellow cornmeal
1 c. flour
1 Tbs. sugar
4 tsp. baking powder
1/2 tsp. salt
1 c. buttermilk
1 large egg
1/4 c. butter or shortening
Blend dry ingredients together and mix in shortening or butter. Add egg and
milk until you have a rather lumpy batter. Pour into a greased 8" skillet
and bake at 400F degrees until gold brown, about 20 minutes.
