  1. 'Tis the season and Ed's post reminded me of this ­ I believe I'll make
    one to take to The Widow Dorothy's garage sale tomorrow. It's pretty
    easy to make. 8-)

    Raw Apple Cake

    Serving Size : 1 Preparation Time 1:00

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 cups diced unpeeled apple
    1 egg
    1/4 cup vegetable oil
    1 cup sugar
    1 tsp. vanilla
    1 cup flour
    1 tsp. soda
    1 tsp. cinnamon
    Nutmeg -- ground cloves
    1/2 tsp. salt
    1/2 cup chopped walnuts

    Mix together first column ingredients. Sift dry ingredients together
    and add, along with nuts. Just mix it up. Batter is very stiff. Press
    into greased and floured 9² round baking pan. Bake 35-45 minutes at
    350°. While still warm, glaze with a mixture of butter, powdered sugar,
    and milk.

    A glaze is thin enough to run...but just (around as thick as liquid
    honey possibly thicker)...If you're stuck try melting some jam on the stove
    over low heat and drizzling that over the cake. Pick your own jam (I don't
    know your tastes).

    Think...about that white icing that's drizzled over cinnamon buns. (No, not
    the cream cheese icing sometimes used.)

    I like to have it quite soft -- spread upon the warm cake, it may melt
    some to a glaze rather than a measurable-thickness icing. I'll try to
    take some pics tomorrow morning when I make it.

    Putting jam on this cake is an awful idea. Don't do it. Use a thinnish
    white icing,

    Jen,

    Do you ever make a simple icing for sugar cookies made with very fine
    (powdered) sugar? Maybe, on holidays, you might add coloring? That's what
    Barb is talking about.

    frankly. The instructions say to mix the first column ingredients.

    originally formatted in Word in columns). The nutmeg and ground cloves?
    The quantity there is "some." "A little," if you prefer. Easy on the
    cloves. "A titch." Better?

    (technical term) line that was a continuation of "1 tsp. cinnamon" such
    that it called for a teaspoon of each. Sounded very heavy, but quien
    sabe? Maybe it needs to be extra-strong to get through a Minnesota
    winter or something.

    Here's another one:

    Apple Bundt Cake

    2 C chopped apples 3 C all-purpose flour
    1 C sour cream 1 tsp baking soda
    1 C butter 2 tsp apple pie spice
    3 C sugar 1/4 tsp salt
    6 eggs 2 tsp vanilla extract
    1/4 tsp almond extract

    Preheat oven to 350°. have all ingredients at room temperature. Grease
    and flour bundt or tube pan, set aside. Peel and chop apples, mix with
    sour cream in a small bowl, set aside. Sift together flour, soda, salt,
    and spices, set aside. In a large bowl, cream butter and sugar until
    well blended. Add extracts, then eggs two at a time, blending well
    after each addition. Starting and ending with dry ingredients, gently
    blend in flour mixture and apples, 1/3 at a time. Use large spoon or
    lowest speed to just combine. bake in middle of oven about 75 minutes
    until done. Let cool just a few minutes and turn out on rack. Cool
    completely, then drizzle with a powdered-suger and milk glaze. If
    desired, dust lightly with Dutch-process cocoa.

    Whatchew talkin' about? Did I mention that I put some caramel on top of
    it? I don't think I did. But I did. I'm thinking about doing another
    one for tomorrow, only this time I'll pour some warm caramel over it and
    probably skip the powdered sugar glaze. Probably. This is an old
    recipe and received as many raves today as 30 years ago.

    alike." I didn't make the cake for today's stretch in Dottie's garage.
    AFA the one I baked yesterday, I glazed it and then put some caramel
    (from Abdallah's here in Beautiful Suburban Burnsville, Minne-Soda).
    Errrm, I should've warmed the caramel first, I think -- I was into its
    container with a fork with the idea of artfully drizzling it from the
    fork over the glaze. It didn't drizzle very well. Regardless, it was
    pretty good. My thought for the one that I didn't make today was to
    drizzle the caramel on top of the warm cake and then maybe schmear some
    glazey icing over that. I didn't schmear the icing, I didn't drizzle
    the caramel, and I didn't make the cake.

    Roast chicken for dinner tonight, I'm working on the dressing between
    stints at The Widow Dorothy's.It's a slow sales day and a beautiful
    autumn day in Minneapolis. you should be here.

    Errrm, I should've warmed the caramel first, I think -- I was into its
    container with a fork with the idea of artfully drizzling it from the
    fork over the glaze. It didn't drizzle very well. Regardless, it was
    pretty good. My thought for the one that I didn't make today was to
    drizzle the caramel on top of the warm cake and then maybe schmear some
    glazey icing over that. I didn't schmear the icing, I didn't drizzle
    the caramel, and I didn't make the cake.

    You can always drizzle the caramel on the chicken...

    I'm serious about the dulce de leche. Contrary to what's printed on the
    cans, I simmer unopened cans of sweetened condensed milk completely
    immersed in water for a couple hours to caramelize the contents.

    Let it cool down to maybe 120°F, open the can (carefully, it might gush)
    and pour it on anything or anyone you want to have a caramel coating.

    Good stuff.
