quick and filling lunches??

  1. does anyone have suggestions for quick and filling lunches?

    I can eat eggs at 5 AM, but lunch at work is a challenge.

    I often have little time to eat on the job, and when I do take a break any
    number of interruptions occur.
    I manage a busy High School cafeteria..and I am getting tired of chef's salad
    or cold deli meats and cheese for lunch...not to mention I rarely get to sit
    down and actually finish a meal!!

    Maybe i'm jaded, but I really don't understand why people can't figure out
    what to eat. Also, with all of these constraints, why expect others to be
    able to figure out when/where/if you can eat this or that. I can't believe
    you work for an organization that won't let you have time to eat.

    If you're smart enough to manage a busy high school cafe, then I do believe
    that if you put a little bit of thought into it you could figure out
    something.

    What about canned tuna or canned sardines, baked chicken, jerky, veggies etc
    (in a thermal lunchbox)? Heck, can't you put your food in a frig somewhere?
    And if you only get 5 minutes, then just eat parts of it when you can. Or,
    if it really is that hard to find time to eat, skip lunch since you seem to
    do that anyway.

  3. Cold cuts and green salad are inexpensive and very filling. I roll up
    slices filled with mayo and lettuce.

  4. I like chicken salad with a cucumber salad on the side. My most recent
    idea is pickled eggs which are amazingly good and easy too.

  5. 5 eggs in the morning? Wow...

    Anyway, after suffering almost a year without any bread at all, I
    actually took the time to look around and found these 5 net gram of
    carb tortillas that are great for sandwiches. I think the brand is
    Joseph's. They're made with whole grain wheat and oatmeal bran or
    something like that and taste great, especially if toasted in a frying
    pan first.

    I can fit a whole can of tuna salad and lots of lettuce in them, or
    they're also great for egg and cheese sandwiches. Of course there's
    the old meat and cheese and lettuce standby. I've thought of making
    some sort of crispy salsa-dippers with them or quesadillas, but I
    haven't tried that yet.

    Maybe you can make yourself a sandwich at home with one and bring that
    to work a couple times a week. Cut it into 3 triangles, and you can
    eat parts of it whenever you get a chance. For only 5 grams, it's very
    much worth it, IMO!

  6. thanks all, i realize my problem is twofold..time and variety.
    it's tough to be creative in the kitchen at 5 AM.
    i am going to try to make my lunches the night before, so at 5 AM all i have to
    do is take it with me.

    All of the beef products we serve at school are soy laden and I can't stand the
    smell....and the chicken is ALL breaded.(crispy. plain and spicy ...all
    breaded)

    still, I have access to quality deli meats and cheese, and salad greens.
    I have to bring my own mayo, as the mayo we use is *lite* ugh!!

    the cost of tomatoes and cucumbers is insanely high right now
    our local Baja Fresh no longer serves their pico de gallo.
    I am going to try marinaded and roasted chicken legs...I need a filling lunch
    so I am not tempted by the Hostess demons.

    i can eat two easily..sometimes three, but 5??

    Soup in a small thermos? I'd second Susan's low-carb tortilla wrap idea too.
    Bring a box of coleslaw & tuna, to make a change from salad? Raw veggies and
    dip. Leftovers from supper is my favourite - frittata wedge tomorrow : )
    You could do a batch of those egg/sausage muffins and take a couple in to
    work.

    For me? Last night's leftovers, salad with a lean protein (tuna, salad,
    egg, etc.) along with fruits and veggies. Yogurt. Cottage cheese.
    Soup (have you tried the Black and White Bean soup for the SBD cookbook?
    Good stuff!).
