Girlfriend just made a cake that was low in points. It was pretty good. If you try it, let me know what you think.
Red Velvet Cake mix 1 12oz can Diet Cherry Coke
Bake according to box and divide into 12 peices
Add Fat Free Cool Whip as topping for additional taste.

I've used that same basic recipe many times - works with any cake mix (I've never heard of Red Velvet). Our family's favorite is chocolate cake mix with black cherry soda - gives the cake just a hint of cherry flavoring. This is one of those things that you don't HAVE to use diet soda either. Using regular soda only adds 10 calories per slice (using the 12 slice per cake portion) - still a very friendly desert option for those that don't like diet soda or artificial sweeteners.

Are you sure your GF wasn't at my WW meeting saturday morning? This recipe was discussed at our meeting. Small world.
Also, you can use other flavors of cake and diet soda combination to suit your tastes.
