Tenderquick? What are the ratios for each and can you

You usually can't directly sub TQ and prague 1 or 2 because
of the different proportion of salt to nitrite... not if you
need to be precise that is. It depends on the application.

TQ is composed of salt, sugar, 0.5% sodium nitrite, 0.5%
sodium nitrate.

Prague #1 is one part sodium nitrite (6.25%), and 15 parts
salt. Prague #2 is 1 part sodium nitrite, 0.64 parts sodium
nitrate, and the remainder is salt.

TQ has a much larger proportion of salt.

If you don't have prague powder, you can generally just
substitute Morton's Tenderquick for all the salt in the
recipe. That's what I've been doing until I use up all my
TQ, then I will open the bag of #1 cure I bought from
butcherpacker last year.

tell which is stronger (#1 or #2) from that description. I'm
