SuePan fried pork steaks are nice, as are pork steaks browned and then covered
and simmered in a gravy until tender (yes, I used a package of onion gravy
mix). I've also browned them and done them in a crock pot with a bit of
broth and egg noodles. Can't remember the seasonings I used but it came out
like a stroganoff-type dish except with pork. Hmmm, I might have even
spooned in some sour cream at the end.Jill

4 Pork chops
1/2 teaspoon Salt
1/4 teaspoon Pepper
1 1/2 tablespoons Unbleached flour
1 1/2 tablespoons Vegetable oil
4 Onions; small (2 med) thinly sliced
1/2 cup Beer
1/2 cup Beef broth; hot
1 teaspoon CornstarchSeason pork chops with salt and pepper; coat with flour. Heat oil in a
heavy frypan. Add pork chops; fry for 3 minutes on each side.Add onions; cook for another 5 minutes, turning chops once. Pour in
beer and beef broth; cover and simmer 15 minutes. Remove pork chops to
a preheated platter.Season sauce to taste. Blend cornstarch with a small amount of cold
water. Stir into sauce and cook until thick and bubbly. Pour over pork
chops.Serve with brussel sprouts and boiled potatoes.

Pork Chops With Guinness Stout And Onion Gravy

8 1 inch thick pork blade chops or sirloin chops
salt and freshly ground pepper
All purpose flour
1 tablespoon unsalted butter
2 tablespoons vegetable oil
3 large onions, thinly sliced
3 large garlic cloves, minced
1 cup (about) Guinness stout
1 cup (about) chicken stock
1 tablespoon (or more)
coarse-grained mustard
1 tablespoon chopped fresh parsley
1 1/2 teaspoons (or more) balsamic vinegarSeason pork with salt and pepper. Dredge in flour, shake off excess.
Melt butter with 1 tablespoon oil in heavy large deep skillet over
medium-high heat. Add pork in batches and brown well, about 6 minutes
per side. Transfer pork to plate. Set aside.
Dredge onions in flour; shake off excess. Heat remaining 1 tablespoon
oil in same skillet over medium heat. Add onions and garlic. Season
with salt. Cover and cook 5 minutes, stirring once. Uncover and cook 4
more minutes, stirring occasionally.
Add 1/4 cup stout and 3/4 cup stock and bring to a boil, scraping up
any browned bits. Return pork to skillet. Spoon some of onions over
pork. Add enough additional stout and stock to bring liquid halfway up
sides of pork. Cover skillet with foil, then lid. Reduce heat and
simmer 20 minutes.
Turn pork over and cook until very tender, about 25 more minutes.
Transfer pork and onions to platter using slotted spoon. Degrease pan
juices. Boil juices until thickened slightly, about 10 minutes.
Whisk in 1 tablespoon mustard. Add chopped parsley and 1 1/2 teaspoons
balsamic vinegar. Taste, adding more mustard or vinegar if desired.

mixture*
1 cup chicken broth
1/2 cup apple juice
3 tablespoons margarine or butter
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 (6-oz.) pkg. herb-seasoned
one-step stuffing mix
4 (4-oz.) boneless pork loin chops
(about 1/2 inch thick)
1/8 teaspoon salt
1/8 teaspoon pepperOpen the lid, and delight in a cozy dinner cooked while you were away.
1. In large saucepan, combine dried fruits, broth, 1/4 cup of the
apple juice, margarine, cinnamon and nutmeg. Bring to a boil. Stir in
stuffing mix. Remove from heat.2. Arrange pork chops in bottom of 3 1/2 to 4-quart slow cooker. Pour
remaining 1/4 cup apple juice over pork. Sprinkle with salt and
pepper. Top with stuffing mixture.3. Cover; cook on low setting for 5 to 6 hours.
4. Remove stuffing from slow cooker; place in serving bowl. Stir
gently. Serve pork with stuffing.Tips: *If a package of the dried fruit mixture isn't handy, use 1 cup
of your favorite chopped dried fruit, such as apples or apricots,

4 boneless pork chops, 1" thick
1/4 cup soy sauce
1/4 cup water
1 clove garlic, minced
1 teaspoon pepper
1/2 teaspoon ground ginger
Dipping Sauce:
1/4 cup water
2 cloves garlic
2 fresh green chiles
2 tablespoons vegetable oil
2 tablespoons lime OR lemon juice
2 tablespoons soy sauce
1 teaspoon Thai fish sauce (nam pla)1. For marinade, in a small bowl combine 1/4 cup soy sauce, 1/4 cup
water, 1 clove minced garlic, pepper and ginger.2. Place pork chops in a 1-gallon self-sealing bag, pour marinade
over, seal bag and marinate in refrigerator for 4 hours or overnight.
Drain chops, discarding marinade.3. Place chops on a kettle-style grill directly over medium-hot coals.
Lower grill hood and grill chops for 4 to 6 minutes, turn chops and
grill for 4 to 6 minutes more until chops are just done.4. Meanwhile, for Dipping Sauce, blend all remaining ingredients in
blender container until almost smooth. Serve with chops.Serves 4.

I would fry them with a little oo and butter, then deglaze the pan
and make a sauce with the drippings. Then maybe simmer them for a few
minutes with a lid on. Maybe saute some onion and garlic before

SuePerhaps you have ate yet. But I'm seeing your post just now!
Anyway, you can fry pork steaks in a frying pot with little oil. Roast them
speedy and then dry with white wine. Salt, pepper and cook till they are
ready.

SueHey Sue, how thick are the pork steaks? I used to make a heavy meal out of
them sometimes. I would clean them, trim off the extra fat. Put a tbs or 2
or broth or water in the bottom of a baking dish. Salt and pepper (other
spices as you desire) and put steaks in dish. Smother the steaks with
stuffing mix and cover. Put in 350 degree oven for about 45 minutes. Remove
cover and bake until stuffing is browned.You can also season them and put them under the broiler, pan fry them or
cut the steaks into cubes or thin strips and make your favorite stir fry.Michael

SueRecipe is from my mother. Stuff in parentheses are my comments and
adjustments)2 potatoes (I use russets, any will work)
Small can (8 oz. or so) stewed tomatoes (I use 15 oz.)
Tsp dehydrated onions (or 1/2 onion minced)
1/4 C rice (I use 1/2 C)

2 slices pork steakThe recipe is not fussy about ingredients. Fish will not work instead of
pork though.Slice potatoes into 1/4 - 1/2" slices. Mix all ingredients except pork in
Pyrex casserole dish. Cover (generously) with water. (Use more than you
think, rice will use up a lot of it, especially if you use a 1/2 C.) Lay
pork on top.Put in 375 oven 2 1/2 - 3 hours. Bake until pork is a bit browned, then
cover. (Check frequently to be sure it's not getting overdone. Watch out
for browned rice on the casserole sides; if so, add a bit more water. If
you put in enough water at the start there will be no problems.)(Recipe will work with only one pork steak, or even a pork chop.
Vegetarians can use a TBS or two of cooking oil added last instead.)--

Wiener Schnitzel

Ingredient List:
4 pork fillets (or veal)
1 egg
flour
breadcrumbs
salt & pepper
butterPreparation Instructions:
Pound the fillets until thin, roll in seasoned flour, brush with beaten egg
and roll in breadcrumbs. Fry on both sides quickly in hot butter (about 1 to
1-1/2 minutes per side). Serve with lemon slices
