    My envy of this post was in mind today when I ordered "roast pork
    belly Macao style" at the favorite dim sum restaurant. It was
    superb! Strips cut into small cubes, crispy outside, very tender and
    tasty, served with a two-compartment condiment dish containing hoisin
    sauce on one side and salt on the other. I have no more idea how to
    make that than I do of how to make pancetta, but I love 'em both. -

    What spices did you use?

    I followed Ruhlman and Polcyn. The cure was salt, sugar, pink salt,
    black pepper, junper berries, garlic, and thyme.
