I cooked 3 pork chops last night and have 2 left over....don't know why
I didn't freeze 2 of them. Any suggestions for the two left over chops?
I was thinking of chili but would appreciate your help and suggestions.

How about:
fried rice
pork curry
chop up the meat and put it in a salad
quiche (cook's coice)
sandwich
The possibilities are practically endless.

How about some sort of skillet dish using the pork cut into smallish pieces,
cabbage and potatoes? Just a thought.

Just re-heat them and eat them as is!
They could also be thin sliced for stir fry or fried rice.
Chili? I would not do that...
Sliced thin cold in a salad is also a way I've used them more than once.

No law says cooked pork chops can't be frozen... then the next time
you cook pasta sauce toss them into the pot and simmer slowly until
the meat is falling off the bone. So which cut do you have, loin or
shoulder chops?

Get yourself a quart of chicken stock And make a chinese soup
broth...simmer some ginger and garlic in the stock, maybe some 5 spice as
well as a dash of oyster sauce or soy sauce and some garlic chilli sauce
for zip and add some thin slices of green onion, mushrooms or water
chestnuts and carrot and whatever other veggies strike your fancy to
simmer....just before serving put in thin slices from the pork chops.
Maybe add some left over cooked rice at the table.
Have you considered (excuse my spelling)pork chop quesdillas?
People are forever stuffing porkchops with apple...try stuffing a apple
with the pork chops (a joke).

Yeah, it's not like they'll be bad just because they are left over from last
night! In fact, several days in the fridge wouldn't hurt them. But the OP
didn't say whether she left them sitting out or refrigerated them; that
would make a difference.

Some of us can't eat all that much, Sheldon. One pork chop works just fine
for me. But I wouldn't worry too much about using up the other two, either.
They aren't going to go bad simply because they weren't frozen after cooking
them, unless she plans to keep them for weeks on end 😉

When I toss left over meat off my deck by the time I'm at the kitchen
sink washing my hands the crows are dive bombing... they get all my
meat trimmings, moldy cheese, stale baked stuff... nothing edible gets
wasted here... put a few limp carrots under a tree, by the time I'm
back indoors they're scoffed up.

I agree- I think they are funny, even if they will eat ANYTHING! This
last week, my hubby & I were in the yard, and noticed a huge crow
sitting on the fence. Looked the other way for a sec, and turned to
see it fly off with either a mouse or a mole in it's claws! They also
like to harass eagles and hawks.

They are always harassing the bald eagles and the bluejays near by.
Sometimes they are just quirky, and stare at me through the living room
window. Apparently they can be taught to speak quite easily when tamed.
