A while ago, you had posted information as to how to adjust the temperature
of an oven. I know it is a long process.
My oven is off about 50 degrees and I do not know how to adjust it.
Any help would be much appreciated.

If it is like mine your ovens temperature knob probably has two
calibration screws on the back of it. With an oven thermometer in center
of the oven set the knob to a certain temperature and let it heat up -
about a half an hour or so. Then note the temperature on the
thermometer. Loosen the screws on the back of the know and adjust as
needed. Since you say it is off about fifty degress I would adjust the
oven knob with the screws (if it has them on the back of the knob) and
retest the temperature again.

Under most circumstances this is a service performed at no charge by your local
Gas Company.
Please call them and ask.

And from another angle- we are using a propane powered oven, which is close
to spot on when empty. It's ~30-40 degs off when we measure the temp with
food in it, even after having the food in there for an hour at a time.
Should we adust per empty or per "full", meaning while roasting a chicken?

One problem may be with the design of the oven thermostat.
Some ( cheaper ) thermostats won't turn off
until you "overshoot" the setting by 10 > 15 degrees.
Then, they won't turn back on
until the temp drops to 10 > 15 degrees below the setting.
Depending on when you measure, you may get a 30 degree variance.
Use a pot of water ( in the oven ) as a dummy load.
Set an arbitrary oven temp..... ( 250 degrees )
I assume you've also got an accurate oven thermometer.
When the <READY> light comes on,
wait 5 minutes, then, check your thermometer.
If it doesn't match your dial setting,
GENTLY pry the oven temp knob straight off.
You should see a slot, and a small adjusting screw.
Here's the fork in the road;
On some cheaper thermostats,
you loosen the screw, turn the "numbers dial"
until it points to the actual oven temp.
then re-tighten the screw. "Done"
On other ( and older ) thermostats,
turn the adjusting screw clockwise to raise the oven temp.
turn the screw counter-clockwise to lower the temp.
Turn the screw a quarter-turn in the appropriate direction,
wait 5 minutes, check the temp.
Continue adjusting until thermometer temp matches dial setting.
"Done"
