Generally, the stems taste better to me.
Years ago, when I first had a garden, I grew Swiss Chard. I wasn't
completely sure what to do with it. After washing it off, I cut up the
stems and put them in the bottom of a pan with a little water, and put
the cut leaves on top. I then steamed them. I was never really sure,
from the bottom of my heart, whether I was supposed to eat the stems.
The leaves seemed obvious.
Imagine my surprise upon reading that some people in France feed the
leaves to their livestock, and only eat the stems!
