  1. A million thanks Charlie!

    It was voted the BEST Irish Soda bread the whole family had
    ever tasted. Finally. I had conquered the unconquerable 🙂
    The Leprechaun King would be proud of me.

    Now for the weird part...

    It was especially great with my Green Papaya Salsa.

    It is simply diced green papaya, carrots and scallions.
    Blood Orange Olive Oil, lemon juice, sesame oil, salt,
    pepper, brown sugar, all to taste. Crunchy.

    I just made soda bread boats and piled salsa on top. It was
    incredible. The main dish was Chicken teriyaki. The bread
    went with the sauce and the chicken fantastically as well.

    Ok. So the Leprechaun King might not be so proud🙂 But we
    had a ball! Thanks again. I owe you a beer or seven.

    I would like to thank Karen for her recipe she posted here
    Irish Soda Bread. First time I have made this bread and was
    a little concerned not trying recipe out before hand. Every

    Good soda bread is a congenial friend to almost any
    flavor. ;-)

    Oh yes, definitely. Thanks Karen.

    Your's is next to try🙂 And I have two more besides. I
    suppose it is just
    the proportion of ingredients and personal likes. Charlie's
    was fantastic.
    I suppose I could spend my time doing worse things that
    trying recipes🙂

    You're very welcome, and I'm so glad you enjoyed it! I
    understand your apprehension about untried recipes; I'm the
    same way. Once in a while I tell dinner guests I'm trying an
    experiment. I guess it's a compliment to my cooking that no
    one has (yet) run out of the house, screaming, when I make
    that announcement... :-)

    You're very welcome, Steve! I hope you enjoy it as much as
    my family does. It took a long time before I found a recipe
    that didn't make the usual dry-as-sawdust soda bread. The
    NY Times published this recipe in their Sunday magazine
    about 15-20 years ago, and I've been making it ever since.

    As I posted I had used it in the Green Papaya salad. I had
    more of it the next day, and it was incredible. I love the
    crunch and the subtle taste. And the Blood Orange olive oil
    added that very special extra zing.

    The recipe loosely: Diced green Papaya. Diced carrots and
    sliced scallions. Blood orange olive oil. Touch of vinegar.
    I used lemon infused vinegar (yep, from the same gift
    basket🙂 salt and pepper.

    This went with the Soda bread gloriously. I just used
    the rest of the Blood orange oil to grill steaks
    rubbed with Old Bay I mix from my Penzey's treasures,
    and with the oil.

    Oh yes. Worked on the Salmon as well.

    What's strange is, that it would work with other citrus
    fruit. But it IS different. Delightfully so.
