Pineapple Macadamia Loaf Cake?

  1. It was from Harry & David and it was simply delicious, but quite pricey. It
    had chunks of candied pineapple and macadamia nuts and I'd love to replicate
    it.

    Google offers mostly recipes with crushed pineapple, and a few with candied
    pineapple plus a goodly amount of coconut, which I don't think H&D had.

    Does anyone have a recipe with candied pineapple and macadamias but without
    coconut?.

    That sounds really good. Did it have rum? This is a bundt cake, but
    you could make it in a loaf pan.

    Is volume an issue? Why not add more candied pineapple and macadamia
    and leave out the coconut or just substitute something else for
    coconut?

    Oh, that sounds great -- and with a touch of rum that I don't believe H&D
    used. As for the shape: so I'll use a bundt pan instead of a loaf pan. I
    will eat this stuff in wedges, slices or crumbs.

    Hmmm. Maybe I'll just try one with coconut. I like it but I was just
    thinking of duplicating H&D's. Maybe coconut will improve it!

    Unless you simply don't like coconut, I think it's a perfect pairing
    with pineapple!

    "condensed" milk?

    The recipe calls for "evaporated" NOT "condensed" milk.

    Since evaporating would condense, what's the difference?. . .Why do I
    have the feeling I'm going to hate that I asked this question?

    condensed milk is made from evapourated milk. Condensed milk is
    evaporated milk and sugar. This recipe doesn't require the sweetness of
    condensed milk.

    In UK evaporated milk is just milk reduced
    Condensed milk is very thick and sweet having a lot of sugar added.
