This recipe came to mind this saturday after having done both Philly
Cheesesteaks and liver Stroganov many times.
Just proceed as with a normal Stroganov, using mature cow liver (no veal
liver please).
After it's ready, just add your favorite Cheez-Whiz substitute and put in
buns a-la Chilly Cheesesteak.
It went wonderfully with Lambrusco and Rosso di Montalcino.

Stroganoff is popular here, mostly in winter, in fact it's my husband's
favorite dish. It was probably more common in the 60's and 70's though,
because I usually see it in vintage cookbooks.It has to be made the proper way, thin strips of quality beef, red wine,
mushrooms, good sour cream and noodles, and NO LIVER! -

Speaking ONLY for myself - I think it's the Beef Liver. For a lot of
Americans under the age of 50 (ie, not of the depression-era geneartions)
the 'innards' of any animal are problematic at best. In my case I can only
really eat the livers of wild animals - elk, deer, antelope. And I can only
really enjoy it cooked one way - cut thin and lightly pan-seared in butter
with carmalized onions. Just cooked until it isn't pink and then heavily
peppered and given a squeeze of lemon.So I really don't think stroganov is the issue.
