My go-to quick summer dish:
Penne con tonno e fragoli e mozzarella
Penne with Tuna, Mozzarella and Cannellini beans
1- 14 oz can Great White Northern Beans or Cannellini drained and washed.
Canned beans are on most food snob's acceptable exceptions list
8 oz of Tuna, For this I use the frozen tuna chunks seared to a medium
rare middle, you can use quality canned Alabcore. If oiled save it for the
dressing
12-16 oz of Cooked Penne pasta or a pasta of your choice, such as a
Farfalle, Rotini, Gemelli, or a Oreocchiette, more of a matter of visual
astehtics so even use the various colored pasta.
2/3 cup mozzarella cut into a small dice. Try fresh mozzarella if you can
readily acquire it.
combine and mix.
It is ok to combine when the pasta is hot but do let cool.
I like approx equal parts beans and pasta with approx half as much equal
parts Cheese and Tuna, give or take. it is after all a recipe that you will
modify to suit.
Dressing:
a heavy 1/4 cup olive oil
juice of a lemon
a hand full of fresh chopped parsley
a teaspoon of fresh thyme
1 clove of finely minced garlic
a teaspoon of Anchovy paste (optional)
a pinch of Red Chile pepper flakes ( optional) ( pull out those packets you
have thrown in the drawer from those take out pizza places)
S&P to taste
Mix welland pour over the beans, tuna and paste
different Garnishes to try:
thinly sliced Red Onion
sliced scallions (green onions)
capers
sliced roasted red peppers
a handfull of canned artichoke hearts ( marinated is very ok in this)
Toss and serve or chill and serve later
