I have NOT tried this yet. I have just edited it for us and am posting it.
I've converted the metric so you'll have to adjust some of the measurements.

-= Ingredients =-
CRUST:
6 7/20 ounces fette biscottate - or Graham crackers
4 3/13 ounces margarine - melted
2 9/11 ounces brown sugar
1/2 tbs cinnamon - powder
FILLING:
11/20 pound cream cheese
7 1/20 ounces whipping cream
4 13/22 ounces Sugar
1 tbs flour - all purpose
1/2 teaspoon salt
1 tbs lemon - juice
4 Eggs ; separated
-= Instructions =-
Preheat oven to 180C
Crush the crackers and mix them with melted margarine, the sugar and
cinnamon. Put this mixture in a 10 inch of diameter baking pan (buttered).
Push with a spoon the mixture.
Then prepare the filling: in a mixer, mix the egg yolks with sugar, add a
1/2 tsp of salt, the flour and the cheese.
Then add the cream and the lemon juice and mix again for a little.
Beat egg whites very stiff peaks and add gently with a spoon to the previous
mixture.
Put this cream over the crust and bake for 30 min in the oven.
After the first 20 min reduce the heat to 160C.
Garnish( when the cake is cool) with caramel. The cake is better if chilled
in the fridge overnight.
BTW eat when is cold.
