  1. I'm having a heart attack. The S.O. just called. He's getting a duck. He
    says it's big. A roasted duck as an Xmas gift. I am dancing...

    Roast duck is one of my favorite meat victuals, the only thing I like better
    is a good rack 'o lamb...hmmm I think I'll make it for when I have a
    "football Sunday" at my place...some dumplings, some red cabbage, gravy,
    maybe even some mashed parsnips ;-p

    It's rich too so you don't have to eat a boatload of it to sate yer taste
    cravings (exact opposite of turkey)...

    I've had roast duck twice in the last three months. The first time, I served
    it with buttered wide noodles with poppy seeds, and creamed cabbage. More
    recently, I had it with a Moroccan carrot sauce (I posted the recipe at the
    time). I also had a cucumber & preserved lemon salad, toasted pita bread,
    and a cous-cous salad.

    Do I understand correctly that it's pre-cooked?

    Didn't you eat Duck soup at Ouest, the first time you came to visit?
    I know I did and it was fantastic. Next time?????????? The ducks I
    used to eat, --were Long Island Ducklings, as far as I know. Nothing
    fancy.

    Had you come to see me before all the Hungarian and Czech restaurants
    went out of business, you would have found the best ducks in this
    neighborhood. The roasted Czech style ducks were the best, served
    with sauerkraut, bread dumplings, apple sauce and as many more side
    dishes, as you would want. The gravy was incredible, just the jus,
    defatted and served in large gravy boats, to pour over the duck and
    the dumplings. As for Palatschinken, if you knew the waiter or the
    owner, you could always ask for more. All on the prix fixe menu,
    which was the biggest bargain you could imagine.

    What!? The beet phobia I could (barely) understand, but a person who
    likes food and fun who has never eaten duck? No Peking Duck? No Duck
    a l'Orange? No fancy-dancy roast duck breast with the celebrity chef's
    sauce of the week? No Tea Smoked Duck? No roast duck with cherries?
    Seriously, this would be an exploratory trip you'd enjoy.

    Duck is to chicken as rabbit is to ...well, chicken. More inherent
    taste, potentially juicier, well suited to both sweet and savory
    treatments. The only thing to avoid is the hunter who shoots the ducks
    that eat fish (like Canvasbacks and Mergansers). Don't accept his
    gift. Aside from that, as they say, checkitout, dude. -aem

    I'm glad for you, and happy you're happy 🙂 I can't say I'm envious, as the
    one time I ate duck (at my brother's wedding reception) I spent the rest of
    the night sick....but I'm still happy for you 🙂

    I.m.o. muscovy can't compete with duck. It's ..... like hare to rabbit.
    Sorta. More meat, leaner, stringier. Duck is just scrumptious, juicy,
    rich, melt-in-your-mouth and make your eyes roll back in delight avian.
    There is nothing quite like it. Canard a l'orange is what I'd ask for as
    my last meal if I ever had to make that call.

    I'm into plebeian foods. Any duck I've ever seen on a platter looks
    weird and doesn't have any drumsticks.

    Some of the things you've posted aren't a bit plebeian. At any rate,
    you don't have to cook it. At restaurants we prefer to order things
    that we don't cook at home. Keep it in mind for when you go out.

    How about if it were a Chinese menu? Peking duck, tea smoked duck, and
    plain roast duck are often found on Chinese menus. They're all really
    good. The Peking Duck is mostly for the succulent skin, pieces of
    which you put into a little pancake with maybe a chunk of scallion and
    a dollop of hoisin sauce or a spicy soy-type sauce to finish it off.
    The other two will be cut into bite-sized pieces so you won't notice
    whether the anatomy looks weird. And if you're with a group and
    ordering multiple dishes you always have something else to fall back to
    in case you don't like the duck. -aem

    Duck is wonderful. I had smoked duck on a flight halfway around the
    world... remember when airlines actually served meals rather than a banana
    and a bag of Chex mix?

    Ducks aren't big; they are about the size of a big chicken. But they taste
    so much better!

    Heh! The third glass was "pretty gud" too. I skipped the ice cube,
    chugged it down and went to bed. Rob didn't believe I drank as much as
    I did, knowing my fondness for TaB. I do know one thing, though. You
    don't want to mix TaB and red wine in the same glass at the same time.

    Where we live we are surrounded by many ducks (but we do have a cunning
    escape plan...), don't eat enough of them (part of the cunning plan is to
    change this). Love roast duck... I was a bit disappointed the last time we
    had duck, though - it was 'pieces', very little meat, and a bit on the tough
    side to say the least, likely 'wild' mallard shot locally, maybe an older
    one too.

    Yaknow, you don't see enough roasted ducks in nature, pond fires being a bit
    of a rarity and all.

    Shaun aRe - There's a Chinese hole in the wall type place in Bayswater,
    London, that supposedly sells the most delicious crispy duck to be had, in
    whole, half, or quarter duck, cheap as chips, right out of the front window
    counter - Kath's bro and his lass, Elph always visit on the way back home
    from the city. Not tried it myself yet since the street is near always a
    traffic jam right outside the place when we've been past. Next time maybe!
