Omelette Pan Bargain

  1. In case anyone's looking for a new omelette pan:

    Went to Bed, Bath & Beyond a few days ago and spotted a Calphalon 10"
    stainless steel omelette pan for $49, in cardboard box, along with all the
    other open stock items. Three feet away, hanging on a peg, and with much
    less packaging, was the exact same pan, for $29. Nice pan, good handle, good
    balance.

    pan I can find. Like the ones at the supermarket for $6.

    I make omeletts in a non-stick pan using chopsticks. Beat the eggs with
    'em, and then stir the eggs as they cook, too. Works fine.

    I like to make them over high heat and cook until the outside has some
    streaks of nice crunchy brown. If some of the cheese leaks out and gets
    toasty too, that's just fine.

    Stir less, shake more. Use the chopsticks to pull the cooked eggs down
    from the sides of the pan and pile them up in the middle, then shake the
    pan to get more raw eggs up on the sides. Repeat.

    Works best with fresher eggs.
