Ohhhhhhhhh, you caught me just as I was going out..... (G)
Makes 12 servings:
Cake
1 T unsalted melted butter 2 C cake flour
3/4 C unsweetened cocoa powder 1 1/4 t baking soda
4/2 t double-acting baking powder
5/2 t salt 1 3/4 C granulated sugar
6/4 lb (3 sticks) unsalted butter, cut into 1/2 oz pieces 3
large eggs 1 1/4 C whole milk 1 t pure vanilla extract
Icing
1 1/4 pounds confectioners sugar 1 1/4 C unsweetended
cocoa powder 1 1/4 pounds (5 sticks) unsalted butter (cut
into pieces)
7/2 C whole milk 1 t pure vanilla extract.
Cake prep:
Preheat oven to 350F. Lighly coat insides of THREE 9 by 1
1/2 inch cake pans with melted butter. Line pans with wax or
parchment paper. Then lightly coat with more melted butter
and set aside.
Sift together cake flour, cocoa powder and salt. Sift onto
wax paper.
Place sugar and 3/4 lb butter in mixer with paddle. Mix on
low for 1 minute. The beat on medium until soft, about 2
minutes. Scrape down bowl and paddle.
Continue beating on medium an additional 2 minutes until
very soft. Scrape down. Add eggs one at a time beating on
medium for 30 seconds after each egg.
Operating mixer on low, while gradually adding about half of
the dry followed by half of the milk. Incorporating slowly
for 1 1/2 minutes. Add rest of dry and milk and slow for
another 1 1/2 minutes. Scrape down bowl.
Add vanilla extract and mix for 5 seconds on low. Remove
bowl and mix with spatula until all mixed if necessary.
Divide batter into the 3 pans about 2 1/4 cups per pan and
spread evenly.
Bake on the top and center racks until toothpick comes out
clean - about 35 minutes. Rotate pans about halfway through
between top and center racks.
Remove from oven and let cool in pans for 15-20 minutes.
Invert onto cakes circles or cake plates wrapped with
plastic wrap. Carefully peel off bottom papers. Refrigerate
while preparing icing.
Icing:
Sift confectioners' sugar and cocoa. Sift onto wax paper and
set aside.
Place butter in bown with paddle. Mix on low for 1 minute.
Increase speed to medium and beat 2 minutes. Scrape down
bowl. Beat two more minutes until very soft.
On low speed gradually add half of the dry followed by half
of the milk and beat 2 minutes. Add rest and beat and scrape
for 2 minutes. Beat on medium for 1 minute until very soft
and fluffy. Add vanilla extract and mix on low for 5 seconds
and then medium for 1 minute until fluffy. Spatula until all
mixed if necessary.
Assemble cake. Peel off plastic wrap and use 1 1/2 cups
icing over top and edge of layer one. Add second layer and
repeat and then third.
Refrigerate one hour before serving.
