  1. Wayne's post made me decide to post this. <g> I work in a factory, and
    last Sat, the supervisors decided we should have a pitch-in. I still
    had about 4lbs of catfish left over from when my sweetie went fishing,
    and made a catfish stew - intending on using a recipe my mom had sent
    me.

    Before I actually started cooking, though, I googled this group to get
    some more ideas. So what I ended up making wasn't exactly Mom's
    recipe...nor anyone here's specific recipe...and luckily it turned out
    pretty good!

    I sauteed some onions, celery, a *lot* of minced garlic and peppers
    (yellow, orange and red) in olive oil and butter. When they were
    softened, I added some flour and made a light roux. Then I added 2
    cans of low-sodium chicken broth, and a large can of diced tomatoes. I
    seasoned it with thyme, rosemary, celery salt and 2 bay leaves. Oh,
    and some red pepper flakes for heat. I let it simmer for awhile, then
    added the catfish, and simmered until the catfish was barely done.
    Into the fridge for the night, then when I woke up the next morning, I
    brought it back up to low boil, poured it into the crockpot and headed
    off to work.

    When the day was over, there was maybe one more bowl left, so I guess I
    wasn't the only one who liked it.

    The pitch-in was pretty good too...heavy on the desserts as usual, but
    my friend had brought in some really good chicken and noodles, and
    another woman made a huge pan of lasagna, so we weren't all going into
    sugar shock!

    Just thought I'd share.

    LOL - shame you're in AZ...Dave has caught some *monsters* this year!
    Unfortunately, he didn't care for the stew - he prefers his catfish
    battered and fried.

    Lots of people prefer that, or cornmeal coating. I like it baked or
    grilled, but even in southwest TN the price of catfish is outrageous. Good
    job on the "pitch-in" 🙂

    I bought catfish for $3.50 a pound on Saturday. I thought that might have
    been a good price although I've never cooked or eaten it, but love fish and
    the person at the fish counter told me it was fresh in that day - I always
    check... who knows!.

    Yuk. Went to cook it up Sunday and it stunk! So..........took it back
    Monday and as I slapped it down on the courtesy desk, noses did wrinkle. I
    asked where they got it from and was told it was farm raised - they did not
    know where.

    Methinks dead fish is in transit for a long, long time - probably why it was
    on sale.

    Damn, but I'm in Ontario and the closest ocean is a 13 hour drive.

    Bummer.............

    Yes, my loss! I also love catfish coated in cornmeal and fried, but I'll eat
    them any way I can get them. :-)

    Catfish don't come from the ocean; they are freshwater fish. Even where I
    am the catfish (which is farmed within 100 miles) is usually flash-frozen
    before transport. You were sold a bill of (bad) goods, Elaine. Next time
    look for frozen catfish fillets and try them. Please don't let this turn
    you off catfish forever.

    She is right. :-)
    Fresh frozen catfish fillets are your best bet. Farm raised is far more
    common too than wild.

    I had some perch fillets that dad bought fresh frozen, but I left then
    in the 'frige a day too long and they got that "fishy" smell. :-( I used
    a trick mom taught me. I washed them well in white vinegar. Eliminated
    the odor and cleaned them well before cooking them and they came out ok.

    Not the preferred way of doing things but it was better than tossing
    them out as they were not really spoiled, and it was MY fault they got
    that way, not the stores.
