Will you have a car? If it were my first time in Portland,
I'd try to do a day trip going east along along the Columbia
Gorge to Hood River, then turning south along Mount
Hood to US 26, which will take you west back to
Portland. A stop at Timberline Lodge would be in
order. They serve dinner. I'm not sure they serve
lunch. But it's worth checking.
I'd try to spend a day in the wine country starting
in Dundee (about 1 to 1-1/2 hours south of Portland
on US 99W). There are several worthwhile restaurants
in the area for lunch.
Lots of craft beer, farmers markets, etc. It's also
a good restaurant town. Try Northwest 21st and
Northwest 23rd, the Pearl District, and various
SE neighborhoods (e.g., inner SE Division, Hawthorne
and Division and).
You didn't say when you were going, but the main portion
of Rose Festival starts this week and goes through next
week. That's something I'd prefer to avoid.
I don't know about salmon jerky.
