Some great walks there - some very different from the south of the island.
There are quite a few books. One walk in particular I'd recommend is Teix(?)
and the Achdukes path.

Fairly essential book is 'Walking in Mallorca' by June Parker, pub.
Cicerone Press, and you *really* need to check access on most walks as
there are ongoing problems with access on many walks.

I would echo Graham's recommendation of getting a copy of June
Parker's book (publ. Cicerone Press). Yes, there are access problems,
but you won't run out of superb walks inside of a fortnight. For more
details, do a Google Groups search on the two words "Mallorca" and
"walking", and use the advanced search facility to restrict the hits
to uk.rec.walking. You should pick up many previous threads on this
subject.
