disk brakes...would work and i believe its been done or is being done

Hand shifters have a cable. Bike deraileurs don't spin around fast.
Unicycle hubs do. You do the math.

Hang on... bicycles have hub gears with cable shifters. The cable
pulls on a non-rotating linkage that pokes out the centre of the hub's
axle... Any reason a unicycle hub gear shouldn't work like this too?
