What variety of cucumber? If it's a "telegraph" cucumber then it might not be all that seedy.

Make tzictki. I just know that spelling's off. It's cucumber dip. Slice & salt a tiny bit & drain. If you don't want that bother, then just peel some parts, seed if absolutely necessary, rough chop, sling in the fp with a hunk of cream cheese at room temp, a garlic clove or six and a carton or so of sour cream. I usually thicken mine with one (count'em) one envelope of plain gelatin dissolved in 1/4 cup of warm white wine or water. Can be spiced with a *little* cumin or mint. Or a little fresh basil. Go easy on the spices here. Makes a great cold dressing for spicy meat sammiches. Or dip or salad dressing. Edrena, who's still getting the hang of measuring stuff.

I don't know the varietal. I think if I had a garden full of them (more than the one hill I have), it'd be a good pickler. Normally I pick them when they're about 8" long and about 1-1/4" diameter. That happened to me Thursday. That cucumber was so heavy, I could have used it for a club. LOL I sliced it, scraped out most of the seeds and I made a cucumber salad.
