I had dinner with a friend this weekend, and was really NOT looking
forward to it. The friend is older and just not very nutritionally
literate, so that there is commonly little she serves that I'm happy
eating. But lately, since she stopped smoking, she's gained weight,
and blood sugar has risen to pre-diabetic levels and she's apparently
getting dietary advice from somewhere.
Anyway, the dinner was lovely and totally low carb. A nice tossed
green salad with lobster, aioli dressing, grilled salmon, and
asparagus. But what really amazed me is that she fixed a lovely lc
dessert! No recipe, she just started with memories of desserts made by
her mama back in Chile.
She made a meringue base, using beaten egg whites and Splenda. Spread
into an 8-inch circle on a baking sheet and baked till firm but not
browned. Then she topped that with sliced fruit - strawberries and a
bit of mango. Then, she spread whipped cream sweetened with Splenda
over the top, and refrigerated it.
It really was nice, refreshing in the very warm weather we're having,
and very pretty too. I wouldn't have known it wasn't a sugary dessert
if she had not told me. This would work with any fruit, with berries
being particularly nice (and lc).
